Mini minty hot fudge ice cream cakes for grownups

Image
Ice cream cake used to always remind me of kids birthday parties -- bu t these mini vegan ice cream cakes are for grownups... Isn't it s trange how we love to dig into huge portions as kids but seek out (and often pay more for) tiny food portions as adults? W hat's up with that? Sometimes I like a giant slice of cake, sometimes I like a two-bite treat...I guess I haven't fully grown up. But just one bite of these decadent little ice cream cakes makes me feel like an adult.    Though I have no idea why teeny-tiny desserts seem i nfinitely more sophisticated, they really do, don't they? These two-bite Ice Cream Cakes are no exception. Enjoy them naked with some shaved mint-chocolate on top or make my Peppermint Hot Fudge Sauce and drown them before you down them...   They 're basically two-b ite hot fudge su n daes with a peppermint kick -- also known as manna from heave n ...oh , and they 're kind of healthy too ... I know what you're thinking -- ho...

I know what you're thinking...an ice cream recipe in the middle of February? Bear with me... I am a big fan of smoothies and ice cream in the winter -- well, year round really. If you asked me 'what's your favourite dessert?' anytime in the past 30 years the answer would always be ice cream. I am an addict, through and through. I'm not saying conventional ice cream is healthy -- because its totally not. In fact I think everyone should stop consuming dairy. But today's rec ipe isn 't f or ice cream , its for 'nic ecream'.   Creamy, cold, d airy free, vegan, gluten free, soy free and nut free. Perfect for me and my allergy challenged peers. " N icecream", also known as "banana ice cream", is healthy and just plain incredible. Seriously -- nicecream has been one of my favourite vegan food staples for years. I f you haven't tried it yet you need to, now. V egan ice cream made of whole food ingredients -- who would have thoug...

Chocolate Marble Cheesecake for Valentine's Day (vegan, gluten-free, nut-free, soy-free)

Don't you just love cheesecake?!   Cheesecake was one of my all time favourite desserts before I went vegan. I mean, what's not to love? Its silky, sweet, light and airy but rich and creamy with a buttery crumb crust. Heaven. What are your plans for Valentine's Day? We haven't figured our's out yet exactly. We have a house guest on Saturday so whatever we do it will be a Sunday afternoon or evening plan which limits things a little. I should mention that I used to boycott Valentine's Day for it being a made - up holiday designed to make single folks feel like garbage and put unnecessary pressure on relationships. Not to mention all the materialistic behavior i t inspires in people...just bleh . Even though I am making this recipe as a swee t treat for my husband on Valentine's Day, cheesecake always reminds me of my best friends and our crazy dating stories. In my 20s I went through a cheesecake phase where I'd order it out a lot and most of...
