Apple pie (for 1 or 2, Gluten-free, Vegan)

  Who wouldn't love a personal size apple pie? Pie is without a doubt one of the most comforting foods on the planet. Give everyone on Earth their own piece of pie, throw some caramelized apples and cinnamon in there and you have a recipe for world peace. Tell me I'm wrong. There's so much to love about this personal apple pie. The pastry is low in fat - yet buttery tasting, the filling is lightly sweetened with natural sweeteners (no refined sugar), the recipe is gluten free without any nasty ingredients - yet the pastry is flaky, and its healthy enough to enjoy for breakfast. I adore chocolate cake ... don't you? Especially a thick slice of cold chocolate cake straight from the fridge, layered with chocolate frosting or ganache...The kind of chocolate cake dreams are made of. I always thought good, moist chocolate fudge cake required oil. I was wrong... Believe it or not, this dense and moist chocolate layer cake involves no oil at all. It's vegan, gluten free, naturally sweetened and thoroughly awesome. So awesome in fact that I ate it for breakfast two days in a row. I know what you're thinking -- but wipe that look of disgust off your face! This chocolate cake is pretty innocent... Gingery Yellow Rice (glutenfree, vegan)

Alright, I'm just gonna say it -- I f#$%ing love ginger... Its just so versatile and delicious. I love it in curries, in smoothies and juices, in soup, in salad dressing, pickled, on sushi...if ginger is in the house -- I will try to eat it. One of my absolute favourite uses for ginger is this Gingery Yellow Rice recipe. This simple-to-make one-pot rice dish constantly finds its way to my plate, probably because its got a well-established place in my heart. My favourite thing about making it is how it makes the whole house smell heavenly. All you do is add some delicious spices to brown basmati rice, boil and simmer it away until ready to fluff and voila -- an exotic tasting p re tty bowl of deliciousness. Green smoothies for great digestion

Creamy, cold, rich tasting but healthy -- I love green smoothies. I enjoy either a green smoothie or a green juice ev ery sin gle day . I love them and can't get enough. They make me feel energized and healthy. I'm always surprised to hear that people make my smoothie recipes. I rarely post smoothie recipes on this blog, mostly because they are a little out of scope for a baking blog. But I aim to please and I have been asked to share more of my smoothie recipes. I decided to share two vegan recipes which involve the same digestion-enhancing ingredients but are very distinct from each other in flavour.  I have greatly improved my digestion over the last year or two and I think mango played a big part in that process as I always felt much better on days that I ate mangoes.
